Vegetarian Lasagna

Tomato sauce
No Cook Lasagna Noodles (Gluten Free work terrific here)
Mozzarella (dairy or vegan), shredded
In a baking dish, spread a thin layer of tomato sauce to coat the bottom
Layer uncooked noodles over the bottom
Cover noodles with a thin layer of tomato sauce, sprinkle over tofu crumbles and some shredded cheese.
Repeat and end with a layer of cheese
Cover your pan with foil and bake at 350 F for about 45 minutes covered. Bubble the top under the broiler set at 500 F for about 2 minutes. Let sit for a few minutes then dig in!

Chocolate Bark
A perennial favourite treat from Oh She Glows

We love a combination of hemp hearts, coconut and pumpkin seeds but you really can get creative with your toppings!

Vinaigrette
In a 500mL Mason jar combine:
1 tbsp minced shallot (or one garlic clove crushed)
1 tsp Dijon mustard
1 tsp light brown sugar
1/4 tsp kosher salt
1/4 tsp freshly ground pepper
2 tbsp chive vinegar (or substitute with another light vinegar)
1/2 tbsp apple cider vinegar
2 tbsp fresh lemon juice
3/4 c extra virgin olive oil
Screw the cap on tight and give it a good shake to mix

Super Cookies
Combine in large mixing bowl:
3 cup rolled oats or quick oats
1 cup coconut flour
1 cup oat flour
â…“ cup hemp hearts
3 tsp baking powder
3/4 tsp sea salt
1 cup dried cranberries
3/4 cup chocolate chips
In separate bowl mix and let sit 10 minutes
1 cup ground flax
1 1/2 cup maple syrup
½ cup + 2 tbsp sunflower butter
4 1/2 tsp vanilla extract
½ tsp cinnamon
7 tbsp neutral-flavored oil
Mix wet and dry together and stir until well combined. Line a baking sheet with parchment paper. Spoon roughly ¼ cup of batter onto baking sheet per cookie. Space evenly apart, and lightly flatten. Bake for 11-13 minutes (no longer, or they will dry out). Remove from oven and let cool on baking sheet for 1 minute, then transfer to a cooling rack.
Makes 32-34 cookies

Action Balls
Combine in large mixing bowl:
1 1/3 - 1 2/3 cup oats
1/2 cup hemp hearts
1/2 cup chocolate chips
Cream together:
1/2 cup peanut butter
1/3 cup honey
Mix wet and dry ingredients together well.
Form small balls and let refrigerate for an hour.
Makes 18-20 balls
